Ingredients:
- 1 lb chicken breast, sliced thin
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup snap peas
- 1/2 cup carrots, julienned
- 2 tbsp olive oil
- 1 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 tsp garlic, minced
- 1 tsp ginger, minced
Instructions:
- Heat olive oil in a large pan over medium-high heat.
- Add chicken and cook until browned. Remove and set aside.
- In the same pan, add garlic and ginger, and cook until fragrant.
- Add vegetables and stir-fry until tender-crisp.
- Return chicken to the pan, add soy sauce and sesame oil, and stir well.
- Serve hot over brown rice or quinoa
