Ingredients:

  • 3 eggs or egg whites

  • 1/4 cup bell peppers, diced
  • 1/4 cup mushrooms, sliced
  • 1/4 cup onions, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a non-stick pan over medium heat.
  2. Add onions, bell peppers, and mushrooms. Cook until tender.
  3. Add spinach and cook until wilted.
  4. Whisk eggs in a bowl, season with salt and pepper, and pour over the veggies.
  5. Cook until eggs are set, then fold the omelette in half.
  6. Serve hot.
