Fit Chicken Stir-Fry

Ingredients:

  • 1 lb chicken breast, sliced thin
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 1/2 cup carrots, julienned
  • 2 tbsp olive oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced

Instructions:

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add chicken and cook until browned. Remove and set aside.
  3. In the same pan, add garlic and ginger, and cook until fragrant.
  4. Add vegetables and stir-fry until tender-crisp.
  5. Return chicken to the pan, add soy sauce and sesame oil, and stir well.
  6. Serve hot over brown rice or quinoa
